Seconding avgolemono and how easy it is to make!

Have been making variations on chicken or tofu, noods, and greens in a soy-seasoned broth. Sometimes more or less gingery, sometimes with mushrooms, sometimes the chicken is meatballs, always lots of scallions to garnish.
