I would say you could safely do this over low heat in a pot - stir constantly and when it thickens remove from the heat and beat in the oil. Thanks for asking!

I never used it in custard but I wouldn't recommend it as the starches are gelatinized. Try custard powder or tapioca starch, it should work well

absolutely! I used it in my shortbreads where only the yolk is needed. It won't hold as much air as a regular yolk but it is great for binding and tenderness

Thanks for looking! Pomona's is a brand of pectin requiring no sugar to jel and instead uses calcium for the chemical reaction. I have added links to the product and corrected the lemon juice to vinegar in the directions. Hope you give it a try!

We have frozen it as-is fully cooked (in smaller portions, however) and it was passable being heated in the microwave, although I would recommend undercooking the pasta a minute or two if this is your plan. We didn't have an issue with the shrimp (maybe they're buffered by the rest of the dish?) but if you're wary I would cook and stir in the shrimp after re-heating the rest of the mixture.
