The recipe as written sounds perfect...but...where does the mint come in?

These look delicious (although I loathe mint in things, so I'd use a different flavor).

Now that is a great idea! =)

But the warmth does work well with carrots. Another spice swap is to use cumin instead with the brown sugar.

To be honest, if they're done like this, I'd probably skip it. However, use brown sugar and some cinnamon and ginger, and I will be asking for seconds. =)

My partner is diabetic, so I don't make my candied carrots much, but when I do, they go quickly!
