http://frayedlaces.blogspot.com/ : Training Update

didn't you JUST move?!? and seriously, missing a day of training is not a big deal. I follow Pete Pfitzinger's marathon plan, and it includes a table that explicitly states how many days you can miss of training without it affecting your performance, especially when there are more than 8 weeks left until race day. It's something ridiculously *more* than 2 days.

http://frayedlaces.blogspot.com/ : The Gluten Free Triathlete Contest

I have been using that, too, and haven't noticed any issues. But, it is more expensive than regular Quaker and does take a lot more time to cook. I make it up in huge batches so it lasts all week! Last time I made it with rhubarb and strawberries. sooo good :)

you might enjoy corn-flour crust pizza better than rice pizza (it's less work to make anyway, unless you have tons of leftover rice). It's just equal parts masa (ground up corn into flour, used to make tortillas) and water. Spread it out thin on a pizza pan and bake at 425F for 15-20min before you add the toppings. If you like extra thin and crispy crust, just mash it down thinner. Then add any of your toppings you like and bake until they are melted and brown. I also have this crazy favorite lunch of rice and peanut butter/jelly. Seriously, a bowl of hot rice with a spoonful each of pb & j, put it in the microwave for thirty seconds... shabam! delish. almost as good as the real thing. As an aside, oatmeal is not gluten free unless its labeled as such, because its usually processed on equipment that wheat is processed on. I get sick from Quaker brand, anyway. And also, lunch meats aren't always gluten free either, but that doesn't matter to you since you don't buy meat in the store.
