I love the idea of a carrot cake biscotti--that is a great idea. And yes biscotti are perfect holiday tin cookies.

I love ceviche--but I never thought the pickling killed all germs. As in, you just use whatever fish, you do not look for sushi grade? I have never made it at home because of this...
