Yes, definitely refrigerate the fudge first, just to firm it up, otherwise it mooshed all over the parchment. Not fun. :)

I'm new to lamb as well. You should definitely check out Border Springs (the link is at the top of the post) for lamb, it was beautiful and had no gamey weird taste to it at all! That's how I remember my grandmothers lamb...not so pleasant. :) Thank you about the contest. I hope I win too! What a fun experience it would be to go to the festival.
