Lemon and cranberry? Lovely change from the orange and cranberry that seems to dominate. If only it were a bit cooler, so that baking seemed more appealing. I have a bag of cranberries in the freezer that would be perfect in these muffins.

Great recipe-- I made something similar, but I don't make the filling very creamy. Might have a splurge a bit next time!

BTW, I have recipes in a binder but I promptly stopped using them when they migrated from a pile on a bookshelf into the binder.

Yup, I've done the city space thing! It is creamy, but more from the fine suspension of the protein clumps than actual cream content. It's almost like creme fraiche if you don't drain it too long. Drain it longer, and it's firmer, like farmer's cheese. I think the major difference between milk-based and whey-based ricotta is curd size, which then impacts the texture.

It's delicious! We got dairy goats, and have been making homemade ricotta from the whey after making rennet cheeses. The texture is incredible, and I quite like the flavor after it's been cultured. Try it on boiled potatoes.

Ah, in the US, recipes are not subject to copyright (unless they are written in a "unique" way, which means somehting like integrated into a narrative, not that you changed the ingredients) and so they are not legally considered to be intellectual property. Therefore, it's good manners (and ethical!) to credit/cite properly (or link) but you're not obligated to obtain permission to reprint legally. It can be frustrating as a writer, but it makes blogging easier!

Good question-- I like DIY meat alternatives (sometimes). It all comes down to the natural of the item though. Smokey processed soy masquerading as a hambuger or chicken nuggets, not so much. A lentil kefta or black bean burger, probably.

Wait, a light box to solve the problem of insufficient windows and daylight hours? I'm going to have to read more.

I've just learned to eat hard boiled egg yolks recently, and this might be a nice way to try them. Seems like a great weeknight supper dish to make-- as long as you have hard boiled eggs in the fridge, they would be pretty quick to make.

Union Square Farmer's Market is one of the things I really miss about NYC! Such a fantastic trip, and great food options. My favorite vendors included the sprout guy (sunflower seed sprouts!), Eve's Cidery, and Hawthorne Farms for their bianca cheese. Eat it on crackers with honey and pepper... fantastic.
