Yup, pretty much the same concept. And great for people who don't like nonstick pans and hate scraping eggs off of stainless steel.

I've had water on top of the cheesecake and got it off the same way you did, and I've also just left it and it evaporated in a short time. Then again, the air is pretty dry here. I don't think there's any way to avoid the water, since there's a lot of steam in the pot, and it's going to settle down on top of the cheesecake. I don't know if covering would affect the cooking, but since the water doesn't seem to harm anything, I've never tried.

I really don't know for sure, but I'd think not. The watermelon wouldn't hold up well, and I don't think it's got enough acid to make it safe.

I know - I was surprised, too. Not all of the recipes use boxed products, but he didn't shy away from them, either. Back then, Bisquick was a pretty common item. My mom seldom used any pre-made stuff, but she always had a box of bisquick for pancakes.
