These crackers look terrific! I have a sweet potato to use up, so I think I'll try a gluten-free version of your cracker recipe. You're right about how much healthier homemade crackers are. I do have a lentil cracker recipe that is good; I've just not made it for a while.

Strawberry Almond Pancakes

Ingredients:
1+1/2 cups Club House rice flour
3 tablespoons ground almonds or almond flour
4 teaspoons baking powder
1/4 teaspoon salt
4 to 5 teaspoons granulate sugar or raw sugar
3/4 cup milk or non-dairy milk alternative
1/2 teaspoon Club House pure vanilla extract
1/4 teaspoon Club House pure almond extract
3 eggs, separated
2/3 cup diced fresh strawberries

Directions:
1. Whisk together rice flour, almonds, baking powder, and salt. In a separate bowl, whisk together sugar, milk,vanilla, almonds, and egg yolks. Beat the flour mixture with the wet ingredients until smooth.
2. Beat egg whites until fluffy with soft peaks. Fold beaten egg whites into batter.
3. Heat a skillet or griddle over medium heat. Lightly grease skillet and pour batter onto the hot surface (or into a greased heart-shaped pancake mold) to form pancakes. Flip and cook the other side of the pancake.
4. Keep pancakes covered and warm until ready to serve. Top with whipped cream and additional strawberries or your favourite syrup.
