Personally, I have only worked with closed kitchen and it has worked fine for me so far. But like you have mentioned, a semi-open kitchen does sound good too :)

My stomach is rumbling at the description of all those delicacies you have mentioned! And being midnight, I can't really do anything about it right now :D Being from Kerala, I have a weakness for all things south indian and can see some of my favorite dishes up there (ghee roast) :)

Such a detailed post and you have written it so well. And I do agree, selection of fabric is one that should be paid attention to, rather than going for an impulse buy.

It's a nightmare when you have to travel long distances. There have been cases when I have actually held it in rather than risk facing a disgusting washroom. I know it's not healthy, but those are the lengths that one has to go to when there is a case of poor hygiene. A very thought provoking write up, Ramya.
