It actually just shoots out a laser, has it turn around in about 4 feet, and brings it back to get converted to energy, like a laser chainsaw. There are a lot of scientific errors in Star Wars, but the galaxy is meant to be interesting, not scientifically correct. Just sayin'...

In order to manipulate plasma in the way you describe, you would need enormously powerful magnetic fields, likely more powerful than MRI machines of today. Even we could assume a future time where you could have MRIs in your pocket, handling these fields would present problems. For instance, untethered metal objects in your vicinity would likely rush at you like bullets, while less mobile ones would pull you towards them (possibly even dislocating your arms in the process). Even if you could reduce the range of the fields, when two sabers got close to each other there would be a tendency for either attraction (would two sabers become inseparable?) or repulsion (could you make them even touch at all?) or probably torque produced while the poles try to align themselves (likely another scenario for the dislocation of the arms). None of this even speaks about the feasibility of trying to wield a blade made of plasma, which would presumably need to generate heat in the thousands of kelvins in order to slice through metals. I suppose it could be less powerful if it only needed to slice flesh? Just sayin'. (Setting Nerd Mode back to off now.)
