Update to 3.0 through ituns for free, jailbreak with redsn0w, and when ultrasn0w comes out, download it through cydia.

Download the 3.0 firmware from iclarified or some other source, shift+click to restore, then browse to that firmware. Then once it's done restoring jailbreak it using redsn0w

I'd rather wait for it to be good instead of have them release it right now and have it ruin my phone.

Well since apple plugged up the hole that made 3g jailbreakable, the dev team needs to find a new one before it can be jailbroken or unlocked. Since the 3.0 firmwares baseband has been confirmed by the dev team to be unlockable, if they release a jailbreak for the 3gs while you're using that baseband, it can be unlocked also.
