Uh, it's from my head? Make a pot of polenta, spread it into a baking dish. Saute mushrooms with garlic, thyme and salt in butter until the liquid that releases is absorbed. Add a tablespoon of red wine vinegar, cook until absorbed. Spread on top of the polenta, sprinkle with ground red pepper or red pepper flakes if you like a little spice. Cover with shredded cheese (as noted Manchego is great, fontina too) and place under broiler until melted and a little browned. You can also add chopped greens (spinach, chard, kale) to the mushrooms before the vinegar and cook until wilted, or saute them separately with garlic and serve on the side. Top with a fried egg and this is my comfort dish.

Manchego and mushrooms go really well together. I make a polenta w/sauteed mushrooms topped with Manchego and popped under a broiler for two minutes dinner that I love. Or on bread instead of polenta. Or just slice the manchego for the dish and eat it while you wait to add it because Manchego is the best.

My parents sponsored a Vietnamese "boat" family to resettle in Colorado in the 70's. Our families ended up co-mingling holidays and family events for a generation, which as a child I thought was kind of annoying (weird food instead of turkey) but exciting as well (Vietnamese wedding splendor). As an adult I realize what a step it was for my small town parents (not hippies, but children of the Depression who were deep into social justice issues) to take.

I grew up in Denver and we spent all of 7th grade focused on Colorado history (pioneers! gold mines! silver mines! Unsinkable Molly Brown!). This included watching the entire "Centennial" miniseries, which seemed to be 78 hours long. And yet I ended up knowing very little of the native history that I stumbled upon as an adult.

I'm a psych nurse that constantly questions if what I'm doing is helpful at all, so thank you for this. I, too, have heartbreak remembering some of the people I've worked with.

I know this is really late to the table but.... my father is a Korean vet and NEVER talked about the war. Ever. Until dementia started 3 years ago and now he perseverates on his experiences there. Or more to it, he perseverates about who (civilian and soldier alike) he couldn't help when they needed it and how he is a failure morally because of it. It's heart breaking.

I'm in the US. Due to not tracking things I had my Mirena for almost 6 years before getting a new one. My gyno told me the birth control aspect lasts until 7 years but the positive period effects start declining after 5 due to declining progesterone, so spotting and cramping can increase at that time. Which is what was happening to me, and which caused me to check my insertion schedule.

I grew up in CO eating this on Sunday nights. We called it Taco Salad. It's also similar to the Frito-pie my Texan husband makes on occasion. And it tastes awesome.
