That's an interesting point, I've never considered that. I've tried various types but have never taken into account the brand. I usually go for whatever is the best deal at the time.

I do tend towards the Orient Phoenix brand though (the one that comes in little squares in a red package) because I think that's what my family would use when I was younger.

I'm glad you enjoyed it, Sarah! I love your description of sitting with the bowl of dhal, it perfectly captures the enjoyment of this dish.

She's one of my students who is a baker with whom I have a semi-serious baking feud. The competition was meant for all students to enter and for a select few teachers to be judges (me being one of them as it was partially my idea, oh the power trip...)
