Much of the time the work they have these interns perform for free has nothing to do with the courses the interns are taking at university, and does not teach the interns job skills they couldn't pick up for $8.00/hour at McDonalds. One way to look at it is good business practice - turning as high a profit as you can, for as little expense as you can get away with. Another way to look at it is as a tax dodge. A third way is to recognize that the companies are taking advantage of the naivety of the students to turn a fast buck.
