<description>It is so great to see so much awareness about celiac and eating gluten free.  It is amazing to think that 1 in 133 people have celiac, but also 3 out of 10 people have gluten sensitivity.  So many more people should be eating gluten free, but they don&amp;#039;t know it.  Some of my family members found out due to having 3-4 autoimmune diseases, not really any GI problems.  It shows up in so many different ways.  Our family (including 2 small children) went GF almost a year ago as a preventative measure since we have celiac on both sides of the family.  It was a challenge at first, but in the end, we are eating so much healthier!  It is nice that so many restaurants are now offering gluten free menus.  There also a lot of GF products on the market now that are really good.  Food manufacturers are really seeing the need and developing new, tasty products.  This article has a real negative take on how GF foods taste and are prepared.  I have not found it to be that way! </description>
