The layers data is only gone if you use the eraser tool on the layer and not the layer mask. In this tutorial, we used it on the layer mask. Using the eraser tool on the layer mask is non-destructive to the layer. If you make any mistakes, you can paint the layer mask white and the pixels will reappear.

As mentioned before, using the eraser tool in the layer mask does the same thing as painting the layer mask with black.

Using the brush to paint the layer mask black works the same way as using the eraser. When you use the eraser tool on the layer mask, it will paint the layer mask with your background color (black by default).

It should work in Photoshop CS4. I've just tested it again myself and it works fine. Are you loading it through the flyout menu of the brush palette?

The desaturation is optional. It is to help with the painting process so that you know which areas you've painted.
