I would like to make these for tomorrows Super Bowl get-together. How much coconut do you suggest putting in? Also, I realize using non-organic peanut butter exposes us to pesticides, herbicides and toxic fertilizers (I only use organic) but I was under the impression that the reason we have been encouraged to eat only Valencia peanuts is because of a mold problem that happens when the peanuts are grown in locations where there's too much moisture and apparently the Valencia variety can grow in drier locations. Have you heard of that? Or am I behind the times?

Harvest Eating : Whole Wheat Baguettes

I made this bread exactly like the recipe (no flax, no eggs) and it turned out very nice. I don't have an electric mixer so I kneaded it by hand. Next time I will add the eggs and extra flour and see how I like it. You forgot to say how much salt to use. I don't think I used enough. I also wonder about the recipe name because it isn't actually a whole wheat bread; it's a white bread with a little whole wheat flour added. Picky, picky me. I would prefer "Baguettes with Whole Wheat"--slightly more descriptive. Yes, bread rocks! Especially homemade bread.
