Veg Inspirations : Chocolate chip cookies made healthier ~ Egg free, butter free chocolate chip cookies.......and an an

If you are using fine sugar that we find in the US you do not need to powder it. Indian sugar, like turbinado has a coarse texture and large crystals, so if your sugar has that kind of texture then yes it might be better to powder it :)

Veg Inspirations : Crunchy Roasted Chickpeas

You can definitely use home made chickpeas too. Just soak dry chickpeas in water for about 8 hours. Drain water, fill with fresh water and cook in the pressure cooker or on the stove top until soft. I use the pressure cooker for this. Drain excess water and proceed with the rest of the recipe.

Veg Inspirations : Oats adai ~ Dhal dosa with oats ~ Savory Indian crepes with lentils and oats

With the proportions in the recipe the yield will be approx 20 to 22 adai. Yield will depend on size and thickness of each adai, so the number is only an approximation

As I mentioned in the post, I used a mini muffin tray and it yielded me about 24 mini cup cakes + 1 regular sized one. The ganache was enough to cover half the cupcakes.

Veg Inspirations : Baked Vegetable Manchurian

If you are looking for healthier options for the binding, I have been thinking about using oat flour in this recipe, as I did in this kofta... .http://www.veginspirations.com/2013/01/palak-kofta-curry-healthier-version.html Although I haven't tried it yet and do not know how it would work out for sure. But if I do, will update this post with the link :) Also besan (gram flour/ chick pea flour ) might work, but it might alter the taste a tad bit. Let me know which option you tried and how it worked out:)

Veg Inspirations : About

Hi Naina, Thanks so much, glad you liked my recipes. About the ragi, I am not sure about Ontario Canada, I live in the US. But my local Indian grocer here usually carries ragi. You can also try health food stores like whole foods, they carry other kinds of millet, so do check and see if they have finger millet too. Hope you are able to find it.

Veg Inspirations : Mango Wheat Muffins ~ Egg Free ~ With Stepwise Pictures

Thanks so much for the feedback. So nice to hear that your son enjoyed these muffins so much. About the frosting, I think either a basic vanilla butter cream frosting or a mango butter cream frosting would work well for these muffins. The mango would enhance the mango taste and flavor of the muffins so I lean more towards the mango butter cream frosting.

Veg Inspirations : Easy Vegan Black Eyed Peas curry- Maharashtrian style Chawli/Lobia curry. With Stepwise Pictures

I haven't tried it with either coconut milk or the packaged sweetened coconut. But I think coconut milk would be a better choice in this curry, it would not give it the same texture as coconut but it should work taste wise. Hope you enjoy the curry. Do let me know how it turns out with the substitution.

Veg Inspirations : Quinoa Ragi Dosai (Quinoa with finger millet Savory Crepes) and a riddle

Seeta, I haven't used aval in this recipe before, but I have used it in other recipes like this one http://www.veginspirations.com/2008/11/sago-rice-... If you want to use aval in this recipe, I would suggest using only about 1/4 cup to 1/2 cup of aval and making up the difference by increasing the quantity of raw rice in this recipe. I find that using too much aval can cause the dosai to clump a little when spreading on the tava.
