I haven't seen a butternut squash around these parts in ages, but when I do I'll give this a whirl!

(BTW, I always label gluten free things, even if it is incidental and not a "wheat thing made into a gluten free thing." Oh, the memories! When I was a kid I had to avoid corn. My allergist gave me a fact-sheet of things that are corn but aren't called that, including certain brands of baking yeast and granulated sugar! Oy! I feel for you! Thank you for writing this post.

Wow. I'm glad you are feeling better.

The cool thing about being at home with the kids is that they know you will always be there. Sometimes you might get cranky, sometimes you might want to pull yourself into a book, but you are there. Stability is a good thing, and you gave up lots of "goodies" to give that to them.

I'm a stay-at-home mamma of two boys, 3 and 21mo. (Little brother is still nursing.) After their dad's mini-stroke last May, we had to change to a reduced sodium diet. I could not find many recipes for reduced sodium meals that would also appeal to our small boys, so I started to create them and share them in a blog.

Today I am sharing what we had for supper tonight: Easy Potato Soup. Enjoy!

At least the mush-ball has other uses. Last night I added a cup of milk, and some garlic and made "Alfredo" sauce. They whey is what I was after to bake bread with. I'm going to try for mozz again tomorrow because I am a masochist and I am out of whey. The kids like string cheese: I pul the cheese like taffy after straining and reheating, and fold it over on itself. Stretch, fold, stretch, fold... Hopefully not *mush.* Have a great day!

Thank you for the post! I have been having an awful time with mozz, too. I tried for the first time last winter and failed, failed, failed again... every batch during the summer and fall was perfect. Now the last three have not worked... I am wondering if a) there are additional additives in my milk from the grocery store in winter or b) the ambient temperature in my kitchen is too low to keep the culture cozy enough for a clean break. I'm thinking it is the milk. I have no problem making soft cheese.

I am going to try your recipe once I get my hands on some culture. What a great idea!

My go-to cookbook is "A Guide to Good Cooking," published by Red Roses Flour. My mom had that book, as did her mom. It's a pretty good starting point for "North American" style cooking and new editions are still being printed. My other two favorites are long out of print, so I baby them: "Mama Leah's Jewish Kitchen," and "The Ukrainian Daughter's Cook Book."
