There was a series of 9 books from Dell publishing, most of which are unfortunately of dubious quality and are not considered canon, but there are 2 that are worthwhile. "The Shadow Within" (#7) deals mostly with the Icarus Mission to Z'Ha'dum, and those parts of the story have been declared canon by JMS himself. "To Dream In The City Of Sorrows" (#9) deals with Jeffrey Sinclair's life on Minbar after the events of season 1 and how he came to lead the Rangers. It's my personal favorite and is considered 100% canon.
There are novelizations of many of the films, including "Thirdspace", "In The Beginning" (my favorite), and "A Call To Arms". They offer a lot of new information and perspectives that there just wasn't time for in the movies themselves.
There are 3 additional book trilogies that are also considered canon: the Technomage trilogy, the Psi-Corps trilogy, and the Centauri Prime trilogy. The Centauri trilogy is called "Legions of Fire" and was written by scriptwriter Peter David.
