Hi Sarah - thanks again! Yes, what I posted above is nearly identical to what I ate when I was losing weight. I haven't lost any in the past few weeks, because I've hit my body's optimal weight and I'm very happy with where I am. :)

The pudding recipe depends on how large of a can of coconut milk you purchase. I use Thai Kitchen (full fat) 12 oz so after I add the rest of the ingredients it makes a total 16 oz. (2 cups). After I make one batch of the pudding it lasts me about a week so I eat about 1/4 - 1/3 cup per sitting. It is pretty tasty!

You're welcome! I rarely snack at work, but while making dinner I'll have wine and cheese and on the weekends some roasted pecans/walnuts/almonds or fruit (always blueberries and strawberries). Glad this was able to help you!
