Not such a big deal. I've also heard that lemon juice in canning adjusts the acidity of the recipe, thereby making it safe to preserve without pressure canning. Certain foods (most fruits) are acid enough to kill germs on their own and can be preserved without pressure canning; others (most vegetables) are not. But if you're freezing something, not sitting it on a cupboard shelf, the low temp would kill the bacteria, so why call for it? I really don't know.
