In the late 19th century, lobster was so disparaged among the upper classes (it looks like a big, ugly insect of the sea) that only poor people ate it, because it was summarily discarded by fishermen and cast away to the poor. You couldn't give it away. It was only after the rich realized how good it was that the price skyrocketed and it became a "gourmet" food. Pizza cheese is the same way. "Fresh Mozzarella" with various kinds of seasonings is now exorbitantly expensive but basically it's a Joe Sixpack food.
