<description>Hi Bob,  Are you nеаr Gyueshevo? That is where we have our village house. What we usually do is collect our recycling and bring it with us back to Kyustendil and deposit it in the recycling bins in town. The rest is composted and our non-recyclable and non-compostable trash is put in the metal containers provide by the village.   Good Luck! Casey </description>

I have been to Talents and it was quite good, better than some of the &amp;quot;top&amp;quot; restaurants in Sofia&amp;hellip; BG chefs I find are quick to throw on the jacket and attitude&amp;hellip; It is also the cultural perception of restaurant workers. Outside of Eastern Europe a prestigious chef is like a rock star, not that the over glorification is necessary, but you are 100% right. Some of my favorite restaurants in Sofia are not attached to a big name chef, but the people involved are passionate about food and that shines through. </description>

I am not sure if the Veliko Turnovo area is ideal for growing cherries, but you can check with some locals or the agricultural institute in VT. <description>I think that they grow a few other things, but what the Gimel people told me focused primarily on the tomatoes and cucumbers. Regardless if these fruits and veggies are bio or not, if you buy them from a grocery store you are eating faceless food. You give the ingredient selection to an outside source, but shopping in the smaller markets and building a relationship with your producer is the only way to go. I still buy sweet potatoes in the fall, not often because they are expensive, but I do. I buy avocados and bananas too, but if it can be grown in Bulgaria well, I wouldn&amp;#039;t think of buying it anywhere other than my local bazaar.  I have had many conversations with people in the food service industry about buying Bulgarian produce and I can agree with most of it. The small farmers have little access to storage facilities, so you are limited in your market, since you can only keep things fresh for so long. Also consistency and quality are huge issues. I spoke with a few restauranteurs that buy their potatoes from Germany, even though they are more expensive because they get the same product at the same quality every time.  This is a rich topic that can go on and on, but it is a good sign that places like Gimel exist. People are conscious about what they are eating and want to eat good and clean food.  </description>

<description>The excitement of a restaurant can have more to do with the company of good friends and a few drinks, but my expectations do not really play into my overall critique of restaurants. I am a culinary professional, so I try to be objective. Maybe with my first visit, I was anticipation something better than what it was, but with my second visit, my expectations couldn&amp;#039;t have been lower. I judge food on the freshness of the ingredients, cooking technique, how the flavors work together, if things are seasoned well, temperature of the food, plates, wine... I would have to say the presentation is low on the list, but still important. Happy Sushi is quite popular for a variety of reasons, but maybe it is the overall ambiance and vibe rather than what is coming out of the kitchen, in my opinion.
