Hey Margie, Great to hear from you! That really is a great question. I should have put a little more detail with the grilling instructions. The distribution of the coals is really important if you need to cook with variable temperatures. Joe is the Grill Master in our family, so he is the one who prepares the fire. Currently we have a charcoal grill that allows you to adjust the height of the coal tray. So we sear the steaks on each side with the coal very hot and close to the meat grill and then lower the coals the complete the cooking. The method mentioned above can be accomplished by arranging the coals after they are fully heated where the hottest ones (red hot ones from the center of the charcoal heap) are on one side and the less hot ones are on the other side. This also allows you to cook veggies or other foods at the same time that need slower cooking or lower temperatures. Lastly if you are using a gas grill (by far the easiest way to control the heat levels) simply have one side of the grill set to high and the other set to medium to medium high heat.
