Oh gosh, this looks awesome! As soon as I saw the picture, I had the same thought that you did - 100% confident that I would love it! Sweet potatoes and avocados in a salsa is such a great idea.

I'm really in love with the fish/fruit combo lately, so this sounds wonderful to me. And there is nothing better than a beautiful, fresh salmon filet!

What a gorgeous meal. I always use mashed cauliflower in place of mashed potatoes, so I've grown quite fond of it. I'm always looking for different toppings for it - I'm loving this one! The pine nuts seems like such a nice touch.

Oh wow, this recipe is sooooo intriguing to me! That banana in there is so crazy and different. This is one of those things that I will keep thinking about until I try it out, I can just tell. I'm thinking I'll make it on some gorgeous sunny day with a margarita :)

I love brandy - what a great idea for a side dish! I also love the idea above about adding cream and tarragon - it sounds so good and decadent that way, too. Tarragon and mushrooms go so well together! And I agree that I too always tend to choose sides with just a few ingredients that are easy to prepare.
