Lindsey, changing the shutter in shutter priority mode (or the aperture in aperture priority mode) will not change the overall exposure. Instead, the camera will change the aperture when you change the shutter speed so that you will end up with the same exposure. So exposure compensation is the way to go.

If you are handing your camera to someone else, switch to auto mode. Then the camera will make all the decisions and you are more likely to end up with a good shot.
If your picture is focused on the wrong place, you can't make it look good. Maybe better with some sharpening and masking in Photoshop, depending on how far off it is, but never good. Sorry.
