I put quotes around wheat because our current wheat is so genetically modified that its DNA hardly resembles wheat. I started researching it not because of weight issues but because I'm severely anemic and found out that wheat, especially whole wheat, prevents your body from absorbing iron. I also noticed that while the consumption of whole grains is at an all time high, so are our obesity problems. There is probably no singular reason for the obesity, but it's interesting how closely the diabetes and obesity epidemics follow the wheat (especially whole wheat which we are told is healthy) consumption. Interesting side effect of cutting wheat out of my diet is that my allergies have gotten much better and my immune system seems to be working better than the rest of my family.
