P.S. I fucked up some hollandaise sauce using a midcentury Joy of Cooking recipe. Your hollandaise recipe? A GODSEND. Saved the meal, and it took like two seconds with an electric mixer. I don't really sing people's praises so I feel like an idiot, but seriously, now. Amazing.

YEEEAAAHH! We made this one tonight, right out of your cookbook, but substituting ground turkey for the lean ground beef. SO GOOD. We have plenty for lunch and dinner tomorrow, too.
