Jedi didn't marry and personal relationships were discouraged, so a Jedi having children would be rare. I'd bet you'd find hella more examples if there were records from when the Sith were more prevalent. Plus Jaina and Jacen, Leia and Han's twins, are also Force-sensitive. Give me one example of the Jedi taking a child that didn't want to go, or against the will of the parents. Getting into the expanded universe, there are definately sensitives running around. Hell, Yoda didn't want to train Luke Skywalker just because he was too old. It didn't seem to bother him that a very powerful Force-user was walking around, but not a member of the Jedi Order, and that's when the Order was in very real danger of dying out completely.

As I said above: Grand Admiral Thrawn (as played by Christoph Waltz) could give Grand Moff Tarkin a run for his money! Unfortunately, Han, Leia and Luke are all in that series. Could we deal with not having Ford, Fisher and Hamil play them? Or would they try to use the original actors (now in their sixties)? I can totally see Milla Jovovich as Mara Jade and Amanda Seyfried as Winter, though. (Or maybe I just wanna picture them that way.)
